Cooking for a crowd today… The crowd actually happens tomorrow. But I got a jump on things by doing the full cook for a low and slow reheat before service. I’m in charge of proteins only, and decided on this Pork Shoulder Braise. I snuck a preview plate for my dinner tonight, and was quite pleased with the results. Full shoulder roasts were trimmed and chunked out. After a good sear, they collectively got a four hour braise in Mirepoix and Garlic, with a braising liquid composed of Beer, Apple Juice, Chicken Stock, Molasses, Malt Vinegar and some Dark Miso. Thyme and Sage bundles brought some herby aromatics. While the meat rested, I made a sauce with the braising Jus with some heavy cream stirred in. On the side is Cauliflower Mash and Sautéed Green Beans. A dollop of Crema added an exclamation point. Tomorrow? Homemade Bratwurst made from the pork trimmings.
