roasted eggplant with preserved lemon cream and saffron tomatoes [‼️‼️‼️edit: i forgot to post the recipe slide, please check my highlight „saffron tomatoes“! It is saved there…so sorry 😭] happy monday my friends how are you? how is your summer so far? yesterday i had a such a calm sunday afternoon and was able to listen to my music (check out my cooking playlists in my bio) and cook. it relaxes me so much….and i love that you guys love my slow stories <3 eggplants are one of my all time favourite veggies and i plan to cook and learn unlimited variations and hopefully share all of them with you. i think about the love i have for cooking a lot and most my childhood memories truly circle around specific smells of persian food and the rituals of eating together. the older i get, the more i cherish these memories and i try my best to pass on these flavours, smells and knowledge to Neo (and well all of you guys ;)). for example the smell of lemon, saffron, curcuma and tomato paste is a very specific one of my childhood. my mom fried onion and garlic with curcuma and chicken and then poured over a sauce made out of tomato paste, salt, water, a lot of pepper and saffron. the reduced sauce over rice and with yogurt is so so good so i have a lot of ideas how to use this sauce as a base for different recipes.
