PESTO ORZO 🌿 a banging 20 minute meal prep recipe that just so happens to be vegan too Enjoy hot or cold and I also love to add an extra protein source on the side (veggie sausages or grilled chicken are my faves)! Simply refrigerate in an airtight container and you’re sorted for the wholeee week ❤️🔥 ▫️250g orzo (dry weight) ▫️*1 tin chickpeas + olive oil, smoked paprika and garlic salt ▫️*15g pine nuts ▫️80g sun-dried tomatoes ▫️150g cherry tomatoes, halved ▫️Handful of rocket ▫️For the sauce: 130g vegan pesto + 1 tsp honey (maple syrup if making vegan), 1 tsp balsamic vinegar and a splash of pasta water *Roast your seasoned chickpeas at 180 degrees for 20 minutes. In the meantime, cook your orzo according to package instructions and prep your other ingredients. Add the pine nuts to the roasting tray with the chickpeas for the final 5 minutes until they’re toasted.
