SAVE THIS for your next family meal! I’ve been making this recipe for Robbie since before we were married, and it’s always a hit. It makes a lot, so it’s good for a crowd (or if you have a big family), and you can customize the flavors to your liking. I got this recipe from a dear family friend and I’ve altered it and made it my own over the years. Hope you like it just as much as we do! Ingredients: • 2 tablespoons butter • 2 cups chopped yellow onion • 2/3 cup chopped green bell pepper • 1/3 thinly sliced green onions • 1 tablespoon dried parsley • 1 tablespoon minced garlic • 1 and 1/4 lbs. chicken breasts, diced • 1 and 1/2 turkey kielbasa, diced • 1 and 1/4 teaspoon salt • 1/4 teaspoon ground black pepper • 2 bay leaves • 1/8 teaspoon cayenne pepper • 1/2 teaspoon chili powder • 1/8 teaspoon ground cloves • 1/4 teaspoon thyme • 1 and 1/2 cup uncooked rice (not instant rice) • 4 cups chicken stock Directions: In a pot, add the butter and yellow onion and sauté over medium heat until the onions are softened. Add the green onion and bell pepper and sauté for a few minutes more. Add the parsley, garlic, and chicken, and cook for about 10 minutes or until the chicken is lightly browned on all sides. Add the kielbasa and all the seasonings and cook for a few minutes until fragrant. Add the rice and chicken stock and bring the pot to a boil. Reduce to simmer and cover. Simmer for 20-30 minutes, checking periodically to make sure it’s not getting too dried out. If after 30 minutes the liquid hasn’t all been absorbed, turn up the heat slightly. If the moisture is absorbed and the rice is cooked, don’t turn up the heat.
