One Pan Cod in Puttanesca Sauce ⬇️ Follow @the.foodie.analyst for more! This easy one pan meal is great for a midweek meal, packed with protein and takes inspiration from the flavours of Puttanesca sauce. Save the full recipe below ⬇️ (Per serving: 459 cals | 41g C, 37g P, 14g F) Ingredients: 2 cod fillets (or fish of your choice) 1tbsp extra virgin olive oil 1 red bell pepper 1 red onion 1 courgette 3tbsp pitted black olives 4 anchovy fillets 1tbsp capers 0.5tsp chilli flakes 1/2 teaspoon dried oregano 1/2 tsp rosemary 1 tin butter beans (drained) 4tsp minced garlic 1 chopped tomato tin 0.5tbsp tomato purée 1 tablespoon chopped fresh basil Salt and pepper to taste Lemon slices Method: 1️⃣ Season the fish with salt & epper and set aside 2️⃣ Dice the red pepper & onion, cut the courgette into quarter slices, slice 4, halve the Kalamata olives, finely chop the anchovy & capers 3️⃣ Heat the olive oil in a non stick pan on med heat, then add all the onion, red pepper, courgette & sauté for 1-2 mins 4️⃣ Mix in salt (to taste), chilli flakes, oregano, rosemary, minced garlic, anchovies, capers. Continue sautéing for another 2 mins till softened 5️⃣ Stir in the chopped tomato, tomato purée, Kalamata olives, butter beans, chopped basil and bring to a light simmer 6️⃣ Place the fish fillets in the centre, top with lemon slices 6️⃣ Cover the pan with a lid & cook on low-medium heat for about 7 mins or until the fish is flaky & cooked through 7️⃣ Garnish with fresh basil and serve either on its own (or with toasted olive bread, garlic bread, pasta or rice on the side) #onepanmeal #onepandinner #onepanmeals #puttanesca #fishrecipes #fishrecipe #easyrecipes
