To celebrate the official start of soup season, I am bringing you one of my favs, Spicy & Creamy Miso Udon Noodle Soup! 🍜 Chewy udon noods, a gingery/garlicky/creamy broth that’s slightly spicy and packed with umami flavor, velvety mushrooms, savory pork, crunchy onions 😋😋 Spicy & Creamy Miso Udon Soup Broth: 4 cups chicken stock 1 cup evaporated milk (2% or almond milk would work too) 2 tbsp miso paste 2 tbsp creamy peanut butter 2 tbsp mirin 2 tbsp minced garlic 2 tbsp minced shallots 2 tbsp minced ginger 2 tbsp avocado or evoo Salt to taste Toppings: 1/2 lb ground pork 1 tbsp soy sauce 1 tbsp mirin 1/2 tbsp dark soy sauce Shitake mushrooms, sliced 1/2 tbsp soy sauce 1/2 tbsp mirin bok choy, quartered soft boiled eggs, halved green onions curls Momofuku Chili Oil (or whatever you prefer) Toasted sesame seeds togarashi Method— Boil the eggs and bok choy. Set aside. In a pan on medium heat, add some oil and cook the Shitake mushrooms with the soy sauce and mirin. Set aside, and do the same with the ground pork. In a medium size pot add some oil and fry the shallots, garlic and ginger until fragrant. Turn off the heat and add in the miso paste and peanut butter. Stir until thoroughly mixed. Fire up the stove again and add in the chicken stock and evaporated milk. Bring to a boil and turn off. To assemble, add chili oil and ladle in the broth. Next, add udon and top with bok choy, mushrooms, ground pork, boiled egg, green onions, toasted sesame seeds and togarashi.
