Welcome to Episode 2 of Satisfying Soups where I share easy soups that will SATISFY YOU! This is a childhood favorite that you can make with 5 ingredients and using any tiny shaped pasta—it doesn’t need to be O’s as you can see! The entire meal comes together in 20 minutes, which is a huge win in my book, so make sure to save this post to make it whenever the craving hits. It’s also kid approved :)⁣ ⁣ Makes 6 servings⁣ 1 cup finely grated parmesan cheese⁣ 2 tb olive oil⁣ 3 garlic cloves, mashed⁣ 1/2 tsp salt⁣ 1/2 tsp pepper⁣ 1 tb oregano 6 tb tomato paste⁣ 4 cups chicken or vegetable broth⁣ 1 parmesan rind (optional)⁣ 2 cups tiny pasta like O’s, alphabet, ditalini, orzo, etc⁣ Fresh basil for garnish⁣ ⁣ Preheat oven to 375. Take 1-2 tb of the freshly grated parmesan cheese and place it in small mounds on a parchment-lined baking sheet. Bake for 6 to 8 minutes, or until the parmesan has melted and turns golden. Remove from the oven and set aside, to allow them to cool and crisp up. Heat a large pot on the stove over medium heat. Add the garlic, salt and pepper and stir for 1 minute, making sure not to burn the garlic. Add the tomato paste and stir, cooking for another 2 minutes. Add the pasta and broth, stirring to make sure the pasta doesn’t stick to the bottom of the pot. Cook for about 10-12 minutes or until the pasta is fully cook and the soup has thickened. Taste and adjust seasonings ad needed. Add the soup to bowls, break some of the parmesan crisps and add on top of the soup.
