📢📢 EASY RECIPE ALERT....A CAKE THAT YOU MAKE ON THE STOVETOP 📢📢 Given it's going to be a long hot summer (and climate change isn't real according to some people 🙄) who wants to put the oven on to make a cake? A cake on the stovetop is a much better idea.... So below is a rough and approximate recipe for a Stovetop Fig Cake. Ingredients for the cake batter 2 eggs 200g plain flour, sifted 200ml of full cream milk (or even soy milk or almond milk etc) Zest of half a lemon 3 tablespoons of caster sugar 1 tablespoon of olive oil 1 teaspoon of baking powder 1 teaspoon of bicarbonate soda Ingredients for the fig base A handful of caster sugar 10 figs (approx) or any summer fruit like peaches, apricots, plums etc Method 1. Beat eggs with sugar and lemon zest until pale, light and creamy. 2. Add the olive oil and half of the milk. Mix together. 3..Add the baking powder and bicarbonate soda to the flour and mix. Add the egg mixture. Mix. The add the rest of the milk. Mix until well combined. 4. In a large non stick frypan, cover with non stick paper. Sprinkle a handful of sugar. Add figs to the pan that have been cut in half. 5. Pour the batter over the figs and cook over a medium heat for about 20 minutes. 6. Cover with baking paper, add a lid and flip the cake back into.the frypan and cook for another 10 minutes. Test with a skewer to see if it's cooked. Cook for a few minutes on a low heat, until it's cooked. Remember to always covering the cake with the lid. 7. When the cake is cooked, flip on a plate. Slice and eat, warm or cold.
