Say hello to this Sheet Pan Orzo Primavera! 🍽️✨ It’s my go-to, and I promise it’ll have your guests coming back for more. 🥦🍆 Details ⬇️ Sheet Pan Orzo Primavera @erin.eats.mtl Ingredients: 🥒 1 medium zucchini, chopped 🍆 1/2 eggplant, diced 🧄 6 garlic cloves, peeled 🍄 1-8oz box brown mushrooms, sliced 🧅 1-2 shallots, sliced 🍅 1/4 cup chopped sundried tomatoes in oil 🫒 ~ 1/3 cup extra virgin olive oil 🧂 ~1 tsp kosher salt 🌶️ Freshly ground pepper 🍝 1 lb orzo pasta, cooked according to package directions 🌿 fresh basil for garnish Directions: * Preheat oven to 375°F. * Use a paper towel to squeeze the liquid out of the chopped eggplant and zucchini. * Drizzle a few tablespoons of oil onto a sheet pan and spread it. * On the sheet pan, spread zucchini, eggplant, garlic cloves, mushrooms, shallots, and sundried tomatoes. * Drizzle with oil, sprinkle with salt and pepper. * Roast for 20-30 minutes until the eggplant is soft and not spongy anymore. * In the meantime, cook orzo according to package directions. * Use the back of a fork to mash the garlic and toss all the veggies with it. * Drain the orzo and toss it with the roasted veggies. * Prior to serving, garnish with fresh basil 🌿. This reheats beautifully, even on a hot plate! You can make it with pasta too but it doesn’t reheat as well 💫 Want to make it a full meal?
