Meatloaf doesn’t get the respect it deserves. (Disclaimer: This post is exclusively about food and has nothing at all in common with a corpulent, overly dramatic, hyper-perspirant musical performer from the early 80’s.) After all, meatloaf is just a really big meatball, and everyone loves meatballs, right? But just in case, I raised the bar on this diner classic to bolster its self-esteem. The meatloaf mix is pretty conventional using home ground Pork and Beef, elevated with the edition of some BBQ Spice Rub and Roasted Hatch Green Chilis. For good measure, the cook happened low and slow for three hours in the smoker. At service, I seared slices in cast iron, spooned on a Tomato Enhanced Demi Glacé with sides of Cheesy, Creamy, Horseradish Cauliflower Mash and some Green Beans.
