You asked for it, and Mom and I are here for it! Today, I’m sharing one of her fall recipes from her former bakery. This Pumpkin Chocolate Chip bread is simple, delicious, and the perfect way to celebrate fall! Ingredients 3c flour 2tsp cinnamon (mom says they must be heaping 😂) 1tsp salt 1tsp baking soda 4 eggs (beaten) 2c sugar 2c canned pumpkin 1.5c vegetable oil 1 12oz bag semi sweet choc chips (plus and extra handful 😉) Directions 1. Combine flour, cinnamon, salt, and baking soda in a large bowl. 2. In another bowl, combine beaten eggs, sugar, canned pumpkin, and oil and mix together. 3. Stir into dry ingredients and fold in chocolate chips. 4. Spray 5 small (3.25x6.75) loaf pans with non-stock spray and divide batter between the pans. If you only have one, fill 2/3 the way and keep repeating until you use all batter. 5. Bake in the oven for about 40 min or until toothpick comes out clean.
