If you’re anything like me you are swimming in end of summer tomatoes. 🍅 Let me show you how to can your own crushed tomatoes, perfect for pasta sauce, soups, stews and chilli! Equipment * Canning jars * Canning Lids and rings * Large bowls (at least 3) * Wooden spoon * Paring knife * Large stockpot * Jar lifter Ingredients * Plum or Roma tomatoes * Salt * Fresh basil Instructions 1. The night before, wash your canning jars in hot soapy water or in the dishwasher. 2. Place the lids and rings in heat proof bowl and pour boiling water over them to sterilize. 3. When ready, wash tomatoes thoroughly in cold water. 4. Cut off the stem, halve the tomatoes and gently squeeze out the seeds. Discard the seeds. 5. Once you have enough de-seeded tomatoes you can start the canning process. 6. Add 1/4 tsp of salt to the bottom of your clean jar along with 2-3 basil leaves. 7. Add your tomatoes to the jar, about half way. 8. Using the handle of a wooden spoon, crush the tomatoes in the jar to remove air bubbles and pack the tomatoes tightly. 9. Repeat this process till you filled the jar leaving about a 1/2-inch of headspace. 10. Add a couple more basil leaves to the top if you like then wipe the rim of the jar with a clean damp cloth or paper towel. 11. Place a lid and ring to the top of your jar and screw on the lid till finger-tight. 12. Place the jars into a stock pot and fill with water ensuring the jars are fully submerged with at least an inch of water covering them. 13. Add in at least one potato, which is used to gauge when the jars are done boiling. 14. Bring the water to a boil and let the jars boil until the potato is fork tender. This can take anywhere from 35 to 90 minutes depending on your size of stock pot and how many jars you are processing. 15. Once jars have boiled long enough, carefully remove the jars from the pot and place them on a clean towel to cool for 12-24 hours. 16. Once cooled completely, check the seals by pressing down on the center of each lid. 17. If the lid pops back up, the jar is not sealed properly, so refrigerate and use that jar within a 3-4 days. 18. Label the sealed jars and store them in a cool, dark and dry place and you can enjoy your summer tomatoes all year long! #canning #canningtomatoes #passata #summertomatoes
