That Fluke Vegan - Done My shoulder is still not good but after 2 weeks of not cooking, I firmly put my orthopedic sleeve on, cooked this humble food. @beingbengt helped & it warmed my heart to see everyone slurrrrrrrrping away an the corn. I'm getting so many flukes these days, not that anyone's complaining 😁 I really had thought of making this in a different way. I didn't intend for this meal to be vegan. It just happened. But we were all so happy how it turned out. I pressure cooked whole corn on the cobs in salted water for 4 whistles. I released the pressure & cut each cob into 3 pieces. I used bamboo sticks to put in the middle of each piece I tempered coconut oil in a pressure cooker with mustard seeds, curry leaves, asafoetida, garlic & onions. Once nicely browned, I added in a spice mix from the Kolhapur region of India, tomato puree, coconut milk, fresh coriander, potato roundels & the corn. I mixed well, added in some water, fresh coriander & pressure cooked for 3 whistles. Served with rice this was so so tasty, especially in this windy weather. I sent to my bestie & she said her fad loved it because he had never tried this combo!!! I always associate corn with the rain. I guess it has to do with my childhood where we bought roasted corn from a vendor who rubbed salt & red chilli powder whilst squeezing lime onto the corn. Aah childhood memories. Best kind.
