ROASTED HARISSA AUBERGINES, ZHOUG AND TAHINI YOGHURT 🌶️🍆(recipe in bio) This dish is probably my favourite I’ve developed recently 🥰 To talk about a flavour bomb would be an understatement. You’ve got super soft and juicy aubergines, slightly caramelised from a harissa marinade that is the perfect balance of sweet and spicy. Add to that a creamy and tangy tahini yoghurt, and a fresh flavory herby zhoug. Talk about variety on a plate (AKA gut health heaven) 😇 This meal looks very fancy but it’s actually pretty quick and easy to put together. No sit time for the aubergines, and you’re making all the sauces while they’re roasting. The recipe goes in an easy flow. Plus you’re getting a little meal prep in, as you’ll definitely have some extra Zhoug for the week 👌🏻 Zhoug is a spicy herb condiment originating in Yemeni cuisine (this is by no means an authentic one). It is a mix of herbs, lemon, evoo, chilis, and spices. It’s definitely great to have lying around in your fridge, to elevate your dishes in their nutrient content.
