Peanut Butter Jar Noodles by @megunprocessed 🥜🍜 When you got a little bit of peanut butter left in the jar make this recipe for an easy lunch or dinner 👇 * 1 almost empty Peanut Butter Jar (can sub for almond butter or other nut/seed butter) * 1.5 tbsp Tamari (or soy sauce, coconut aminos) * 1 small Garlic Clove (minced) * 1/2 a Lime (juice) * 1/2 inch Fresh Ginger (grated) * 1 tbsp Pineapple Juice (can sub 1 tsp maple syrup or honey) * Noodles (I used brown rice pad Thai noodles) * Optional veggies - I used carrots and peppers - I recommend firmer veggies for a crunch * Optional protein - cubed tofu or cannellini beans Add all the sauce ingredients to the peanut butter jar and shake together. If sauce is really thick, add a little water to thin it out. Then add the veggies and/or protein (if using) and noodles and mix together.
