the minute the temps drop even just a little…i’m throwing apples into literally every salad i eat 🙈🍎 this bacon, apple cheddar salad with maple dijon dressing & balsamic herb chicken is getting my fall senses tingling, bby!! it’s just a flavor combo i can’t get sick of and all the textures in here make it 🤌🏻 RECIPE (gluten free): for the balsamic herb chicken: -2 tbsp balsamic vinegar -1 tbsp olive oil -2 cloves garlic, minced -1 tsp fresh chopped parsley -1 tsp fresh chopped thyme -1/2 tsp salt -1/4 tsp pepper -1 tsp dijon mustard -1 lb chicken breast (cut in half lengthwise to make 4 thin cutlets) for the maple dijon dressing: -2 tbsp olive oil -2 tbsp apple cider vinegar -1 tbsp maple syrup -1 tsp dijon mustard -salt + garlic powder to taste for the salad: -1 medium apple, chopped into small chunks -1 cup cubed sharp cheddar cheese -6oz bacon, crumbled (bake at 400F for 20ish minutes) -1/4 cup chopped pecans -4-5 packed cups arugula stir together all balsamic herb marinade ingredients in a large bowl. add chicken and toss to cost. let that marinate in the fridge for at least 30 mins. preheat large pan to medium-high heat. spray pan or add a bit of oil. add chicken & cook on medium-high for 3-6 minutes per side (depending on thickness). remove from pan and set aside to rest for a few minutes before slicing. meanwhile, add all maple dijon dressing ingredients to a small bowl or jar and stir or shake until emulsified. then, add arugula to a large bowl and toss with the dressing. scatter remaining salad ingredients over top of the arugula. serve with some of the balsamic herb chicken…enjoy! #baconapplecheddar #fallflavors #fallfood #harvestsalad #healthyrecipes #balsamicchicken #healthydinnerideas #glutenfreerecipes #fallsalad #arugulasalad #easyandhealthy
