It looks like it’s going to a low-key (credit @anjanacooks for the pun) lauki week here with the humongous vegetable my friend @rainarosedesouza gifted me. I made Muthia that served as a fantastic appetiser for a family dinner and will be making more recipes through the week. If you have an unusual idea for using this, do leave it in the comments. Dudhi muthia 2 cups grated dudhi/lauki 1 cup besan 1/2 cup wheat flour 2 tbsp sooji 1/2 tbsp turmeric powder 1 tbsp red chili powder 1/2 tsp baking soda Salt to taste 2 tbsp oil 2 tbsp yogurt 1 tbsp sugar 1 tbsp lemon juice 2 tbsp chopped cilantro 1 tbsp grated ginger 2-3 green chilies Grate the dudhi, put in a cheesecloth and squeeze. Save the water for later. Mix together all the ingredients mentioned above and form a stiff, sticky dough. Add the lauki water for moisture as needed. Shape into cylindrical logs. Oil a cooker shape pan and keep the logs and steam them for 15 minutes. Once steamed let it cook before slicing into rounds. Tempering 1 tsp mustard seeds Sprigs of curry leaves 1 tsp turmeric 1 tsp asafoetida 1 tsp chili powder 1 tbsp sesame seeds Add oil to a hot pan, add the tempering ingredients and then the muthia.
