Who said Sundays must be about biryani and heavy desserts? Every alternate Sunday, I cook something #nourishing and rustic like this platter which has Tirunelveli style Ulundhu Sadam, Paruppu Thogayal and Manathakkali Vatha Kuzhambu. This is a typical Tamil style meal that has the goodness of sesame oil, black urad dal and various other lentils. The addition of coconut to the Urad dal rice is a game changer. The recipe is straightforward and you have to ✔️Roast 1/3c broken black urad dal along with 1 tsp fenugreek seeds on low heat till dal turns aromatic. ✔️Combine this with 1 c rice and wash well. ✔️Soak the washed rice in 3 cups water for 20 mins. ✔️Place the inner pot in the Instant Pot. Press Saute - normal and set the timer to 8 mins. ✔️When display reads HOT, add 1 tbsp sesame oil. Crackle 1 tsp cumin seeds and tip in 4 cloves garlic along with 3 dry red chilis. ✔️Fry the garlic till it begins to change color. ✔️Drain the soaked rice in a colander. Add to the Instant Pot. PRESS CANCEL. ✔️Add 3 c water ( less if your rice crop is new) ✔️Stir in salt. Close the Instant Pot and turn valve to SEALING. ✔️Press Pressure cook - High Pressure and set timer to 13 mins. ✔️Allow cooking cycle to complete and wait for natural pressure release. ✔️Once pressure releases, open, add 1/2 cup freshly grated coconut mix well and serve hot.
