The War On Cheese Naming Rights: The world of cheese sparks a showdown between US and European lawmakers over naming rights. Europe's Protected Designation of Origin (PDO) shields gems like Parmigiano Reggiano, tied to methods and local culture. In the US the is no such protection, letting cheesemakers mimic European protected products without requiring the same standards. Consider Parmigiano Reggiano. In EU, it can only come from a meticulous process and three ingredients (milk, rennet, salt) with a minimum 12-month aging, often stretching to 24, 48, or even 72 months for diverse varieties. The American version requires only a 10-month aging process and lets producers use more ingredients, including cellulose and potassium sorbate for texture.
