~ Cocoa Crusted Brioche ~ Soft, buttery, shreddy and fluffy is everything I could’ve wanted for a brioche. This time i topped it with a cocoa crusted dough. You can also make it just as a plain loaf or brioche buns. Head over to my YouTube if you wish to watch the full video of brioche loaf. ~ Recipe makes 2 loaf ~ *Sweet Stiff Starter* 30g starter 90g bread flour 42g water 16 sugar *Dough Ingredients* 240g bread flour 45g sugar 5g salt 50g milk 2 egg 85g unsalted butter All the sweet stiff starter *Crust Dough Ingredients* 70g unsalted butter 50g icing sugar 30g egg 120g low protein flour 15g milk powder 5g cocoa powder 3g dark cocoa powder * pan size - 18x12x5.5cm ➡️ Prepare sweet stiff starter and use when it triples, about 7-8hr at 27-28C. ➡️ Mix everything except butter till dough comes together and is strong. ➡️ Add butter gradually and knead until dough achieves window pane. ➡️ Bulk proof the dough for 2hrs at 28C. ➡️ Divide dough into 16 equal portions. Round each into a ball, rest for 15mins. ➡️ Roll out the crust dough on cling wrap ➡️ brush the dough top with egg whites ➡️ place the crust dough on top ➡️ use scraper to make lines then coat with sugar ➡️ place into greased tin ➡️ Proof until dough rise 1.5x ➡️ Bake at 180C for 25mins #brioche #sourdoughbrioche #enricheddough #sourdough #sourdoughsoftbread #softbread #briochebread #naturallyleavened #naturalyeast #wildyeast #levain #sweetstarter #sweetstiffstarter #sweetlevain
