Thai-Inspired Salmon Cakes with Chili Aioli. Filled with bold, vibrant flavor, these tasty cakes make a delicious entree or appetizer. (You can also enjoy them as a burger!) FULL RECIPE BELOW: SERVES 4 1 small red bell pepper, roughly chopped 1/2 bunch green onions, roughly chopped 1/2 cup cilantro leaves 1 medium shallot, halved 1 (1-inch) knob fresh ginger 1 lb. boneless, skinless salmon, cubed 1 egg 2 Tbsp. Thai sweet red chili sauce 1 tsp. fish sauce 1/2 tsp. salt 1/2 cup plain breadcrumbs or oat flour Combine bell pepper, green onion, shallots, cilantro, and ginger in a food processor; blend until very finely chopped. Transfer to a bowl. Add salmon; pulse a few times until chopped/minced (do NOT overblend into a paste or the cakes will be greasy). Add salmon to the bowl with veggies, along with egg, sweet red chili sauce, fish sauce, salt, and flour or breadcrumbs; stir to combine. Chill for 30 to 60 minutes. Heat olive oil in a large skillet over medium heat, and use a 1/3 cup measuring cup to scoop up portions of the salmon mixture. Spoon onto the hot skillet and cook for 3 to 5 minutes per side, until golden and crisp. Arrange on a plate and garnish with extra chopped green onion. For Chili Aioli, combine 1/4 cup mayonnaise, 2 Tbsp. Thai sweet chili sauce, 1 Tbsp. lime juice, 1 tsp. sriracha, and 1 tsp. sesame oil.
