This lovely mess is a Croque Madame. I’ve never actually made this before, and maybe I still haven’t, departing from tradition in a couple of ways. For the bread, I used some Low-Carb Focaccia I made a few days ago, and the cheese is Jarlsberg not Gruyere. But, I’m confident the gastronomic gendarmes will lend me reprieve. The Focaccia got a spread of Dijon and some Mornay Sauce. Ham went down along with grated Jarlsberg. The top is adorned with more Mornay and a Fried Egg. On the side are Tossed Greens with a Homemade Balsamic Vinaigrette.
