This healthy sheet pan dinner requires only one pan and just 30 minutes of *mostly* down time for a delightful meal that will please the whole family. It’s totally plant based, gluten free and oil free! The kids will be excited - you can even eat it with chips! Tofu Veggie Sheet Pan Dinner SERVES 4-6 16 oz high protein super firm tofu, cubed 12 oz cherry tomatoes, halved 12 oz mini sweet peppers 2 cups sweet corn 1 tbsp coconut aminos or tamari (or olive oil) 1/2 tsp salt and pepper 1 avocado, cubed 1/2 bunch cilantro, chopped 8-10 basil leaves, chopped Chili Lime Dressing 1 tsp chili powder 1 tsp garlic powder 1 tsp cumin 1/4 to 1/2 tsp salt 1 large lime, zested and juiced 1 tsp maple syrup 1 tbsp roasted tahini Preheat your oven to 425 and line a large metal baking sheet with parchment paper. Spread the tomatoes, tofu, peppers and corn on the baking sheet and drizzle with coconut aminos or oil if using. Sprinkle with salt and pepper and use your hands to gently coat. Transfer to oven and roast for 20-25 minutes until golden. Meanwhile, add the ingredients for the dressing to a jar and whisk to combine. Season to taste by adding additional salt and pepper, maple syrup or lime juice if desired. Remove the ingredients from the oven and let cool for 5 minutes before transferring to a bowl. Add remaining ingredients and drizzle with dressing.
