a high-protein, fall-inspired meal prep breakfast idea for ya 🍳🍠🍁 those starbucks egg white bites are so delish but honestly do not keep me full AT ALL. my harvest maple egg bake has a lot more protein, sneaks in some veggies and also has some sweet potato for a source of carbs! it’s truly a life saver to prep at the beginning of the week 🫶 let me know if you try it! RECIPE (gluten free, dairy free): **makes 8 servings** -olive oil -1/2 yellow onion, diced -3 cloves garlic, minced -6oz sweet potato, peeled & cut into small chunks (about 1/2inch) -8 large eggs -1/2 cup egg whites (could also try subbing about 2 more full eggs) -1/2 cup milk of choice -1 tsp salt -1/2 tsp pepper -6oz fully cooked maple chicken sausage links, sliced thin (i got mine at trader joe’s) -2-3 oz spinach, chopped -1/2 tbsp fresh chopped thyme (or sub 1/2 tsp dried thyme) preheat oven to 350F. bring a large pan to medium heat. once hot, add a bit of oil. then, add sweet potato and onion. season with some salt + pepper. let cook, sitting occasionally, for about 6-8 minutes until onions are starting to turn translucent and sweet potato is getting tender. add garlic and cook one more minute. then, remove the pan from the heat and let that cool as you prepare the eggs. in a large bowl, whisk together the eggs, egg whites, milk, salt + pepper. then, add in the thyme, chopped spinach, chicken sausage and the cooled sweet potato + onion mixture. stir. then, pour into a greased 8x12” or 9x13” baking dish. bake for about 35-40 minutes or until set through. let cool slightly before cutting into 8 squares. enjoy! #mealprep #healthybreakfast #savorybreakfast #fallrecipes #eggbake #fritatta #eggbites #sweetpotato #chickensausage #mealprepbreakfast #healthyrecipes #glutenfreedairyfree #highprotein #highproteinbreakfast
