Breakfast Cookies by @helens_vegan_kitchen Ingredients for 10 cookies: 2 tbsp ground flax seeds 2 cups gluten free oats @justnatural_uk (PR) 2/3 cup desiccated coconut 1/2 cup peanut butter @justnatural_uk (PR) 1 mashed banana 3 tbsp maple syrup 1/2 tsp baking powder (use GF if needed) 1/4 cup dried cranberries 1/4 cup pumpkin seeds 1/4 cup pistachios @justnatural_uk (PR) Preheat oven to 160C fan 1️⃣ Prepare your flax ‘eggs’ by mixing two 2 tbsp of ground flax with 5 tbsp of water and set aside 2️⃣ Add all the other ingredients to a large mixing bowl and add in the flax eggs. Stir well to combine 3️⃣ Divide into 10 equal portions and mould them into a cookie shape on a large baking tray.
