Cut the chicken thigh into small cubes and mix it with the marinade ingredients. Let it marinate for 20 minutes. Thaw and pat dry the shrimp and scallops. Dice the choy sum stems. Slice the carrots. Soak the dried scallops in warm water until soft. 2. Mix one egg yolk with the white rice, and beat the remaining egg white with the other egg. Stir-fry the beaten egg until cooked, then set it aside. 3. Stir-fry the white rice until heated through, then set it aside. Stir-fry the marinated chicken until partially cooked. Add the scallops and shrimp, stir-fry until well combined, then add the diced choy sum stems and sliced carrots, and continue stir-frying. 4. Add the soaked dried scallops, chicken broth, 1/2 tablespoon of dark soy sauce, and the beaten egg.
