SOUPY UDON NOODLE BOWLS 🍜 recipe ⬇️ Welcome to 30 DAYS OF VEGAN!! 🌱 I’m going to be showing you 30 of my favourite dinner recipes for the next 30 days and there are some GOOD ones 😍 This bowl was inspired by the queen @christina.sots 👸 I saw her do something similar and couldn’t get it out of my mind!! Anyway, enjoy & remember to SAVE ❤️ INGREDIENTS (serves 3): 500g butternut squash, peeled & chopped into chunks neutral oil (vegetable or sunflower) 1 onion, finely chopped 3 garlic cloves, minced thumb-sized piece ginger, finely sliced 1 red chilli, seeds removed & finely chopped 1 tbsp mild curry powder 1 tbsp miso paste 1 tbsp peanut butter 500ml vegetable stock 400g can coconut milk 100g kale 3 x 150g packs fresh udon noodles salt & freshly ground black pepper to serve: sesame seeds TOFU: 2 tbsp cornflour 1 tbsp mild curry powder 280g extra-firm tofu, cubed METHOD: 1️⃣ Preheat the oven to 180°c (fan-assisted)/390°f/gas 6. 2️⃣ Combine the butternut squash, a good drizzle of oil and a pinch of salt and black pepper on a baking tray. Use your hands to give everything a mix up, then roast for 40-45 minutes, or until the squash is soft and slightly golden. 3️⃣ Heat a large pan over a medium heat and add a good glug of oil. Once hot, fry the onion for 8-10 minutes, or until soft and translucent. Add the garlic, ginger, chilli and curry powder and fry for a further 2-3 minutes, or until the spices release their fragrance. 4️⃣ Next, add the miso paste, peanut butter, vegetable stock, coconut milk, roasted butternut squash and a good pinch of salt and black pepper and stir well to combine. Bring everything to a gentle simmer and cook for 5-10 minutes, to slightly reduce. Use a hand blender to blitz until smooth, then taste and adjust the seasoning, if needed. 5️⃣ Whilst the sauce is simmering, combine the kale, a good drizzle of oil and a pinch of salt on a baking tray. Use your hands to scrunch everything together, then roast for 5-10 minutes, until the kale is nice and crispy. method continued in the comments ⬇️⬇️⬇️ #veganrecipes #dinner #vegandinner #noodles
