Some Paruppu Vadai were made and enjoyed. Period. To make some awesome Paruppu Vadai, ✔️Wash and soak 1 cup Chana Dal, 10 red chilis and 1 tbsp rice for 1 hr. ✔️Drain the soaked dal and rice in a colander. ✔️Divide the mixture into two batches. ✔️Using your smallest blender, grind one batch in short bursts adding water by the tbsp. ✔️Grind into a coarse mixture and transfer to a mixing bowl. Repeat with the remaining batch. ✔️At this stage, you may add chopped onions, fennel seeds, chopped cilantro and mint leaves along with some curry leaves if you please. Since I was making this for a festival, I didn't add onions etc. ✔️Heat oil for deep frying. Take about 2.5 tbsp batter in your hands, slightly flatten it and drop the discs into the heated up oil. ✔️Fry on low heat, flipping once half way cooked, until the vadas are golden. #tomatobluestips 🌸Don't soak the dal mixture for longer than 1 hr for a crispy texture. 🌸Grind in small batches to achieve a slight bite and crunch in the vadas. This way, you can control how smoothly you grind the batter. 🌸If you choose to add onions, add them to smaller batches and fry immediately. Onions release moisture and vadas become soggy soon after frying. 🌸Always deep fry on low heat.
