PUTTANESCA BEANS 🔥 recipe ⬇️ Welcome back to NICE THINGS ON TOAST! This week we have my take on the classic beans on toast - one of my absoloute fave things ever. I think you will like this one. It’s perfect for lunch or dinner. Sometimes I just serve this with bread on the side to dip in the beans, instead of serving it on top - but see what you prefer. ENJOY ❤️ INGREDIENTS: ⭐️ olive oil ⭐️ 1 red onion, finely sliced ⭐️ 3 garlic cloves, minced ⭐️ 1 red chilli, deseeded & finely chopped ⭐️ 3 tbsp capers ⭐️ 400g tin chopped tomatoes ⭐️ 2 tbsp tomato puree ⭐️ 190g (a whole jar) kalamata olives, pitted ⭐️ 700g jar butter beans ⭐️ 15g fresh parsley, roughly chopped ⭐️ 4 slices crusty bread ⭐️ salt & freshly ground black pepper METHOD: 1️⃣ Heat a good glug of oil in a large pan over a medium heat. Once hot, add the red onion and fry for 8-10 minutes, or until soft and translucent. Add the garlic, red chilli and capers and fry for a further minute or so, just to soften. 2️⃣ Next, stir in the chopped tomatoes, tomato puree, kalamata olives, a pinch of salt and a good grind of black pepper. Bring the pan to a simmer and cook for 4-5 minutes, until slightly reduced. Add the beans, along with their liquid, and continue to simmer for a further 4-5 minutes, or until the sauce is thick and glossy. Stir though the parsley, then taste and adjust the seasoning, if needed. 3️⃣ Brush each side of each slice of bread with a little olive oil. Griddle or fry over a medium heat, until golden and toasted. Generously spoon the puttanesca beans over the toast, then finish with a good crack of black pepper and a sprinkling of extra parsley. #veganrecipes #beans #toast #lunchrecipes
